Economic Management Training for Galdakao’s Hospitality Sector

On November 18, our school hosted the training course “Economic Management of Small Hospitality Businesses: The Cost Breakdown (Escandallo)”, organized in collaboration with the Galdakao City Council, led by Mónica, and aimed at local hospitality professionals.

During this three-hour session, participants worked on essential topics to improve the profitability of their businesses. The first part focused on raw material management and portioning, key elements for completing the yield test and basic documentation. In the second part, held in the classroom, practical exercises were carried out to obtain and analyze the economic data needed for daily management.

The session covered tools such as the production sheet, cost breakdown (escandallo), cost and consumption control, and deviation control, all essential for making data-driven decisions.

The goal of this training is to provide small hospitality businesses with simple and useful management tools. It is also helpful for those participating in the Pintxo Lanperna competition, where the cost breakdown is an added value in the evaluation.
