The Hospitality School and the Galdakao City Council are promoting the professionalization of the local hospitality sector through training in financial management.
On 18 November, the Hospitality School hosted the training session “Economic Management of Small Hospitality Businesses: Costing”, delivered by Mónica Maeso and aimed at professionals in the sector.
This initiative is part of the collaboration that the Hospitality School maintains annually with Galdakao Town Council, through local economic development initiatives aimed at key sectors of the municipality such as retail and hospitality. This collaboration aims to provide the local business community with tools and resources that contribute to improving the management, professionalisation and competitiveness of small businesses.
During the three-hour training session, participants worked on key aspects to improve the profitability and financial control of their establishments. The first part of the session focused on raw material management and portioning, essential elements for correctly carrying out the yield test and completing the necessary documentation to determine the actual cost of the products used.
Subsequently, in the classroom, practical exercises were carried out to obtain, interpret and analyse the financial data required for the day-to-day management of a hospitality business.
Throughout the training, participants worked with tools such as the production sheet, recipe costing, cost and consumption control, and variance analysis, which are essential resources for understanding the financial situation of a business and facilitating data-driven decision-making rather than relying solely on intuition.
This training provides specific support for establishments taking part in the Pintxo Lanperna competition, as having a properly prepared costing sheet adds value to business management and makes it possible to determine more accurately the cost of producing the entries submitted.
At the Hospitality School, we particularly value this type of collaboration with Galdakao Town Council, as it makes it possible to bring specialised training and practical tools to professionals in the municipality and contribute to strengthening the local hospitality and retail business community.
